Dad Ed, my beloved father-in-law celebrates his 74th year of existence today =) A loving and gentle Papa to everybody.
As part of the family tradition, near and far, we celebrated it in our own little way. As usual I prepared instant meals and here’s how I made it.
Easy to Cook -Tuna Carbonara in Tricolored Pasta

First boil the pasta until it becomes aldente. Drain and set aside. Next put some butter or olive oil depending on your choice on a pan. Place two tablespoons of Pesto alla Sicilliana and add the tuna, then saute for two minutes. Add Prego mushroom carbonara sauce, evaporated milk and a little water to dilute the thick mixture. I normally like to make my sauce creamy as much as possible. Serve with Parmesan cheese. Yum!
Carrot-apple Salad

For the dessert or appetizer, I made this instant treat with only one piece for each ingredient. I grated the carrot and apple then combined in a bowl. To add a distinct taste, I squeezed in some lemon on it. Now it’s time to attack!
