Cashew Brownies

Some of my friends might not be surprised about this but for the benefit of my new viewers, part of me dreams to have a nice kitchen, complete with all the essentials.  Baking or cooking is my way of expressing myself in an unlimited way. After I cook/bake I normally take pictures of it that is why I am adding a new food category for Dviewfinder featuring my homemade experiments.  Hope you’ll like it.

Preparation time: 15 minutes
Cooking time: 30 minutes

Ingredients:
125 g dark chocolate
90 g unsalted butter, softened
1 cup (250 g) caster sugar
1 teaspoon vanilla essence
2 eggs
2/3 cup (80 g) plain flour
1/4 cup (30 g) cocoa powder
1/2 teaspoon baking powder
1 cup (125 g) roughly chopped cashew nuts

Procedure:
1.  Grease a 17 cm square tin and line the base with baking paper hanging over two opposite sides.
2.  Chop the chocolate into small even-sized pieces and place in a heatproof bowl.  Bring a saucepan of water to boil and remove from the heat.  Sit the bowl over the pan– ensure the bowl doesn’t touch the water. Stand, stirring occasionally, until melted.  Cool slightly.
3.  Beat the butter, sugar and vanilla with electric beaters until thick and creamy.  Beat in the eggs one at a time, beating well after each addition.  Stir in the chocolate.
4.  Preheat the oven to moderate 180C (350F).
5.  Fold in the sifted combined flour, cocoa and baking powder with a metal spoon, then fold in the cashews.  Spoon into the tin and smooth the surface.  Bake for 30-35 minutes, or until firm and it comes away from the sides of the tin.  Cool in the tin, remove and cut into squares.

    it’s just a white sugar with very fine granules, finer than our normal refined sugar… if you can’t find it, u may substitute it to the latter. for dark choco bars it could either be hersheys baking chocolate bars or cadburry, lindt– whatever is abundant =) i’m teaching you to be adventurous like me… hahaha
